I've had one puff pastry in my fridge for about two weeks because I planned to try a savoury recipe. But I've been so busy with my work that I didn't have a chance until today when my sister and I were home. But instead of that savoury recipe, I thought I wanted to surprise her with something sweet for breakfast without the need to go to the supermarket.
You know, it was one of those lazy mornings.
So, what does a lazy woman do? Open the cupboard and see what we have at home. Here comes the idea of these Vegan Puff Pastry Cinnamon Rolls.
It is an easy and fuss-free breakfast or brunch idea that comes together quickly using minimal and everyday ingredients, which is why I love it so much.
Not to mention, that it is one of the easiest sweet recipes on my blog.

Ingredients for vegan puff pastry cinnamon rolls
Here's what you will need to make these easy and delicious puff pastry cinnamon rolls:

- Puff pastry - The star of the show. I used the store-bought pastry to make this recipe quicker.
- Cinnamon sugar mix - I mixed cinnamon, brown sugar and vanilla sugar.
- Vanilla sugar - For the touch of vanilla flavour.
- Dairy-free butter - Melted butter creates a gooey filling that caramelises slightly as the rolls bake and helps bind the sugar and cinnamon together. This combination is delicious, and I recommend not omitting the butter to ensure the pastry doesn’t dry out.
- Powdered sugar & plant-based milk - for glaze.

How to make vegan puff pastry cinnamon rolls
Here's a simple recipe for the puff pastry cinnamon rolls:

Step 1: Prep the Oven & Puff Pastry
Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper. If using frozen puff pastry, let it thaw according to package instructions.
Step 2: Make the Cinnamon Filling
Mix the brown sugar, cinnamon, and vanilla sugar in a small bowl until well combined. Then, melt the butter in a microwave for only a few seconds.

Step 3: Assemble the Rolls
Roll out the puff pastry on a lightly floured surface. Evenly brush the melted butter on the pastry, then spread the cinnamon-sugar mixture over the entire sheet, leaving a small border around the edges.

Step 4: Roll & Slice
Carefully roll the puff pastry into a tight log. Slice it into 1-inch-thick pieces and place them on the prepared baking sheet, spacing them slightly apart.

Step 5: Bake to Perfection
Brush the rolls' tops with some extra melted vegan butter before baking for a richer flavour. Then bake for 20-25 minutes or until golden brown and puffy.
Step 6: Drizzle with Glaze
While the rolls are baking, prepare the glaze by whisking powdered sugar with plant-based milk until smooth. I like the glaze thicker. If you want it thicker, add more powdered sugar; if it is too thick, add a teaspoon of oat milk to the mix. Once baked, pour the glaze over the cinnamon rolls, and enjoy!

How to store it
These cinnamon rolls are best enjoyed fresh from the oven, but if you have any leftovers, you can store them in an airtight container for up to 2 days.
To reheat, pop them in the oven at 180°C (350°F) for a few minutes.

- 4 tbsp brown sugar
- 1 tsp vanilla sugar
- ½ cup powdered sugar ( for glaze )
