    Quick and Easy Vegan Protein French Toast

    Delicious protein french toast for busy mornings or for a weekend brunch to start your day right. So easy to make, and it's ready in less than 20 minutes!

    This protein french toast is so so good! When I first made it, I couldn't believe its delicious, eggy, and crispy, not soggy! A perfect breakfast on busy weekdays or lazy weekends.

    Ok, ok, it all sounds fantastic. But how am I going to make it crispy and eggy? Let me tell you!

    First of all, what kind of bread you will use is vital. I used dry day-old sourdough bread. I left it on the kitchen counter for a night to ensure it was dry. Second, the secret ingredient is cornstarch. It helps crisp up the batter.

    It will be super tasty, eggy, crispy outside and soggy inside! The perfect french toast!

    In Hungary, we used to eat savoury french toasts. My sister and I often had this for breakfast or dinner when we were small kids with a cup of tea. I know I'm such a weirdo, but I loved it with ketchup or mayonnaise. I never really had it sweet. Though since I'm vegan, I often have it with maple syrup, berries, or yoghurt. But I still love it with vegan ham and cheese!

    This protein french toast is slightly different from the other version of the vegan french toast because I am adding vegan banana protein powder to the cornstarch for its extra protein.

    I love adding extra protein to my meals. Especially after my long runs!

    And what could be better after a long run than a quick and easy meal packed with proteins? Exactly! So here you go, let's jump to the recipe!

    What you will need to make this Protein French Toast:

    I love this recipe because first, you only need a few ingredients; second, it is super easy to make!

    • sourdough bread
    • cornstarch
    • baking powder
    • cinnamon
    • vegan protein powder
    • plant-based milk
    • vegan butter
    • maple syrup
    • mixed berries

    How do you make this Protein French Toast?

    Whisk together the cornstarch, protein powder, baking powder, cinnamon and milk in a shallow bowl.

    Now, add a bit of vegan butter to a pan over medium-high heat and melt. Dip each side of the bread in the batter, then add to the pan.

    Cook for a few minutes on each side until golden brown.

    Serve it with mixed berries, maple syrup and icing sugar.

    Top tip

    To make it crispy use a day-old dry sourdough bread. Do not use soft bread because your french toast will be soggy! Cornstarch also helps crisp up the batter!

    Ingredients

    1. 3-4 slices sourdough bread
    2. 2 tbsp cornstarch
    3. ½ tsp baking powder
    4. ½ tsp cinnamon
    5. 1 tbsp vegan protein powder
    6. 125 ml plant-based milk
    7. vegan butter
    8. maple syrup
    9. mixed berries

    Instructions

    1. Whisk together the cornstarch, protein powder, baking powder, cinnamon and milk in a shallow bowl.
    2. Now, add a bit of vegan butter to a pan over medium-high heat and melt. Dip each side of the bread in the batter, then add to the pan. 
    3. Cook for a few minutes on each side until golden brown. 

    Serve it with mixed berries, maple syrup and icing sugar.
