Vegan Asparagus Tart with Puff Pastry
As you can tell, I love cooking with puff pastries. You can create many kinds of recipes, sweet or savoury; the sky is the limit. It's also super easy to use, and you can make delicious recipes quickly.
This creamy and cheesy vegan asparagus puff pastry tart is our new favourite recipe; it's perfect for breakfast, brunch or a fuss-free lunch but also a great appetiser or snack idea on a lazy day. Are your friends coming over? This recipe is for you!

Why you will love this recipe
I know only some people like asparagus. When I was thinking about this recipe, I told David my plan, but he wasn't too happy about it because he didn't like asparagus.
But he loved it when I first made it, even though the recipe had failed because I'd put too much crème fraîche and cheese on top, and the pastry was too soggy. We ate it all though, all the soggy pastry, because it was that delicious.
Crispy puff pastry with vegan crème fraîche, garlic, and smoky cheese with a hint of lemon baked to perfection with asparagus on top; you know you can't go wrong with it. So delicious!
And a great bonus is that it is also budget-friendly, so it is a winning recipe that I'm sure you and your family will love!
What you need to make this Cheesy Vegan Asparagus Tart
Here's what you need to make this delicious asparagus tart:

- Puff pastry - I used store-bought puff pastry to make this recipe quicker.
- Asparagus - The star of the show.
- Vegan crème fraîche - I used dairy-free Oatly crème fraîche. You can omit it if you don't have any at home, but it adds extra creaminess to the tart, which I love.
- Dairy-free smoky cheese - I love this tart with smoky cheese ( I used Applewood ), but other dairy-free vegan cheese would work well too with this recipe.
- Lemon juice goes well with the asparagus. It adds a bit of brightness to your tart.
- Garlic - We love garlic, don't we? For the extra flavour.
- Salt and pepper to taste.

How to make Cheesy Vegan Asparagus Tart
You will find the full recipe with all the measurements in the recipe card at the bottom of the post.
If you're using frozen puff pastry, you must ensure it's thawed. Leave the pastry in the fridge overnight.

- Preheat your oven to 200°C ( 400°F ). Line a baking sheet with parchment paper.
- Roll out the puff pastry on a lightly floured surface to fit your baking sheet. Place the rolled-out pastry on the prepared baking sheet, and score the edges around the pastry, making sure not to cut all the way through.
- Prick the pastry sheet so it won't bubble up during baking, and set aside.

- Mix the crème fraîche, minced garlic, salt, pepper, and lemon juice in a small bowl.
- Spread the mixture evenly over the surface of the puff pastry, leaving a small border around the edges.

- Sprinkle the shredded cheese over the crème fraîche mixture.

- Arrange the trimmed asparagus spears over the cheese, laying them side by side in a single layer. Season with additional salt and pepper if desired.
- Brush the edges with a mixture of non-dairy milk and turmeric to make it golden brown.
- Bake the tart in the oven for 20-25 minutes, until the puff pastry is golden brown and the asparagus is tender.
- Once the tart is cooked, remove it from the oven and let it cool for a few minutes, then garnish with fresh herbs. Cut the tart into slices and serve it warm as an appetizer or a main course.

Storage
This vegan cheesy asparagus tart is best served right away, but if there are any leftovers, transfer it to an airtight container or wrap it tightly in plastic wrap and store it in the fridge for 2-3 days.
When ready to serve the tart again, you have a few options:
- Serve it cold: If you prefer to serve the tart cold, simply remove it from the refrigerator, slice it as desired, and serve. The flavours will still be delicious.
- Reheat in the oven: If you want to enjoy the tart warm, preheat your oven to 175°C ( 350°F ). Place the tart on a baking sheet and heat it in the oven for 10-15 minutes or until warm. This will help restore some of the crispness to the puff pastry.
Remember, the longer the tart is stored, the softer the puff pastry may become. Enjoy the tart within the recommended storage time for the best taste and texture.

- When scoring the edges of the pastry, make sure you do not cut them through all the way around.
- The non-dairy milk and turmeric mixture will make the pastry golden brown during baking.
- Make sure to prick the pastry before adding the creamy mixture and sprinkling the shredded cheese so it won't bubble up when baking.
- Use fresh garlic instead of garlic powder. Fresh garlic has a stronger and more pronounced flavour than garlic powder, which can enhance the overall taste of your tart.
- Let it cool before serving. Give the tart a few minutes to cool before slicing and serving. This will help the cheese set and prevent it from sliding off the pastry.
- Shred/grate your cheese from the block. It tastes and melts much better.

I wouldn't recommend assembling the tart ahead of time and storing it before baking. The puff pastry may become soggy as it sits with the moist ingredients. It's best to assemble and bake the tart shortly before serving for optimal texture and flavour.
I haven't tried this recipe with frozen asparagus, and while fresh asparagus is generally preferred for its flavour and texture, you can use frozen asparagus instead. However, thaw and drain the frozen asparagus well before using it in the tart. Frozen asparagus may have a slightly softer texture compared to fresh.
Puff pastry can be vegan or non-vegan depending on the ingredients used. Traditional puff pastry recipes typically include butter making them non-vegan. However, most pastries you can buy from supermarkets are vegan and made with vegetable oils or plant-based margarine instead of butter.
