Description
These easy strawberry puff pastry tarts are made with flaky pastry, juicy strawberries and a glossy strawberry jam glaze. A simple vegan summer dessert that's ready with just a few ingredients.
Ingredients
Scale
- 1 sheet ready-rolled puff pastry (around 250-320 g)
- 400 g fresh strawberries, hulled and sliced
- 2 tbsp cornstarch
- 2 tbsp sugar
- 1 tsp vanilla extract
- 1 tbsp lime juice
- 1 tbsp oat milk, for brushing
- 2 tbsp strawberry jam, for the glaze
Instructions
- Prepare the strawberries.
Add the sliced strawberries to a bowl with the sugar, cornstarch, vanilla extract and lime juice. Gently toss until the strawberries are evenly coated. - Prepare the puff pastry.
Preheat the oven to 200°C. Unroll the thawed puff pastry directly onto a baking sheet lined with parchment paper. Cut it into six even rectangles without removing the pastry from the baking sheet. - Score the pastry.
Using a knife, gently score a 1 cm border around the edges of each rectangle, making sure not to cut all the way through the pastry. - Add the strawberries.
Arrange the coated strawberries in the centre of each pastry rectangle, leaving the scored border clear. Gently fold the edges of the pastry slightly over the strawberries to create a border around each tart. - Brush with oat milk.
Lightly brush the exposed puff pastry with oat milk. - Bake.
Bake for 20–25 minutes, or until the pastry is puffed and golden and the strawberries are soft and juicy. - Add the glaze.
Warm the strawberry jam for a few seconds until smooth and easy to brush. Brush the warm jam over the strawberries while the tarts are still warm. - Serve.
Let the tarts cool slightly before serving
