I'm not lying if I am saying that this recipe has become my favourite noodles recipe. I mean, who doesn't like peanut butter. As you can see, or perhaps you will see on my posts, I am a big fan of pasta. Any pasta! If you see me on a corner crying, please bring me a bowl of tagliatelle, and I will love you forever, and my sadness will go away in a minute. Of course, I am just kidding, but I genuinely love pasta dishes and peanut butter, so when I first tested this recipe, I knew that it couldn't go wrong! I just had to find the perfect ingredients and right quantities for the sauce, et voila!
I've tried this recipe with crispy tofu as well, which was scrumptious, but last time I was in a rush, so I had no time to fry the tofu, only to cook the veggies.
Oh yeah...by the way. Did I mention that this dish is not only super delicious and saucy but also quick to make? It will be ready in 20 minutes, including prep time as well. Sounds great, right?

WHAT YOU'LL NEED TO MAKE THIS SPICY PEANUT NOODLES RECIPE
To make the sauce you will need
- natural peanut butter
- soy sauce
- sesame oil
- sriracha sauce
- maple syrup
- hoisin sauce

HOW TO MAKE THIS SPICY PEANUT NOODLES RECIPE
Firstly, chop up all your veggies into thin strips. Heat a little bit of sesame oil in a large frying pan and saute the veggies with a pinch of salt. Meanwhile, make your peanut sauce. Combine all the ingredients in a mixing bowl and whisk until smooth.
Cook noodles according to package instructions. Once your noodles are cooked, add them to the softened veggies in the pan.
Then, pour the sauce onto the noodles and veggies.
Lastly, stir well to combine, add more water if needed and cook for a few minutes until the sauce thickens.
NOTE: As you can tell, I like it super saucy. If you don't, add more noodles and veggies or use half of the sauce you have.
- NOODLES - I love it with udon noodles, but you can use any noodles or pasta.
- VEGGIES - Use any veggies you have. It would be delicious with broccoli, carrots, edamame or purple cabbage etc. Be creative; add your favourite veggies.
- GLUTEN FREE - To make it gluten-free, use tamari sauce and gluten-free noodles.
