Peach Tart with Puff Pastry

This puff pastry peach tart is perfect for any occasion. It is vegan and can easily be made gluten-free, too. 


Units Scale
  • 3-4 peaches
  • 1 puff pastry
  • 1 tbsp cornstarch
  • 1 tsp vanilla sugar
  • 1/2 tsp cinnamon
  • 40 g granulated sugar ( 2 tbsp )
  • jam ( optional )
  • a little bit of dairy-free milk and turmeric combo ( to brush the edges )


  1. Preheat your oven to 400°F (200°C). 
  2. Before preparing the filling, wash the fruits and combine them with sugar, cinnamon, cornstarch, and vanilla in a mixing bowl. 
  3. Gently toss until the peaches are coated evenly and set aside.
  4. Roll out the puff pastry on a lightly floured surface. 
  5. Transfer the cut pastry shapes onto a baking sheet lined with parchment paper.
  6. Using a sharp knife, score a 1-inch border around the edges of the puff pastry, being careful not to cut all the way through. 
  7. Arrange the coated peaches on top of each puff pastry shape, leaving a small border around the edges. 
  8. Brush the edges of the puff pastry with the milk-turmeric combo to give it a nice golden colour when baked.
  9. Place the tart in the preheated oven and bake for 20-25 minutes or until the puff pastry is golden and crispy and the peaches are tender.
  10. Let the tart cool slightly before dusting it with powdered sugar. Serve it with whipped cream or a scoop of ice cream if desired.


If you want a shiny finish, warm some apricot jam in the microwave and brush it over the peaches once the tart is out of the oven.
