pasta with vegan cream cheese and cherry tomatoes

Description

Cosy and comforting vegan cream cheese pasta is the perfect midweek meal that comes together quickly. Delicious, creamy and filling and the whole family will love it!


Ingredients

Units Scale
  • 200g / 7 oz vegan cream cheese
  • 30g / 1.1 oz dairy-free butter
  • 200g / 7.2 oz pasta of your choice
  • 100 ml / 3.6 oz pasta water
  • 250g / 8.9 oz cherry tomatoes cut in half
  • 2-3 tbsp nutritional yeast
  • salt and pepper to taste
  • 4 cloves garlic minced
  • 1 onion chopped
  • Red chilli flakes ( optional )

Instructions

  1. First, melt the butter in a large skillet, add onion with a pinch of salt, and cook until soft. Then add minced garlic and the cherry tomatoes and cook until the tomatoes are soft. It will take only a few minutes. Add salt and pepper to taste. 
  2. In the meantime, cook your pasta until al dente.
  3. When the tomatoes are soft, add cream cheese, nutritional yeast, and the pasta water, stir well and cook the sauce on low heat until it thickens. Make sure your water is starchy because this is how you can make your dish silk and smooth, so scoop the water after your pasta is cooked. 
  4. Finally, drain the pasta when it's al dente and add it to the cheese sauce. Toss everything together until well combined, and cook for another few minutes until the pasta absorbs the sauce a bit. Add more pasta water if needed. 
  5. Garnish with extra nutritional yeast, black pepper and red chilli flakes; if you like it spicy.

Notes

Make sure your water is starchy because this is how you can make your dish silk and smooth, so scoop the water after your pasta is cooked.
