Ingredients

Units Scale

For the salad:

  • 2 cans chickpeas, drained and rinsed
  • 200g cherry tomatoes, halved
  • 200g cucumber, diced
  • 1 red bell pepper, diced
  • 1/2 red onion, thinly sliced
  • 80g Kalamata olives
  • 100g vegan feta, crumbled
  • 2 tsp cumin
  • 2 tbsp olive oil
  • Salt and black pepper, to taste

For the dressing:

  • 8 tbsp olive oil
  • 6 tbsp lemon juice
  • 2 garlic cloves, minced
  • 2 tsp Dijon mustard
  • Salt and black pepper, to taste

Instructions

  1. Drain and rinse the chickpeas and add them to a large bowl. Add 2 tsp cumin, 2 tbsp olive oil, salt and black pepper, then mix well to coat the chickpeas.
  2. Halve the cherry tomatoes, dice the cucumber and red bell pepper, and thinly slice the red onion.
  3. Make the dressing by whisking together the 8 tbsp olive oil, lemon juice, minced garlic and Dijon mustard. Season with salt and pepper.
  4. Add the vegetables, Kalamata olives and crumbled vegan feta to the chickpeas.
  5. Pour over the dressing and gently toss everything together until well combined.
  6. Let the salad sit for 15-30 minutes before serving if you have time, so the flavours can mingle.

Serve chilled.
