Description

Looking for an easy and comforting dinner? These creamy Marry Me Butter Beans are made with simple ingredients, packed with flavour, and come together in just one pan. Serve with crusty bread for the perfect cosy meal.

Ingredients

Units Scale
  • 2 tbsp butter
  • 1 onion
  • 4 garlic cloves
  • 2 tbsp tomato paste
  • 1 tsp chilli (optional)
  • 1 tsp oregano
  • 1 tsp basil
  • 2 cans butter beans
  • 250ml vegan cream
  • 150ml vegetable broth
  • 50g vegan parmesan
  • 80g sun-dried tomatoes
  • 2 handful spinach
  • salt and pepper to taste

Instructions

  1. Cook the aromatics.
Heat the butter in a large pan over medium heat. Add the diced onion along with a pinch of salt and pepper, and cook for 4–5 minutes until softened. Stir in the garlic, chilli, oregano, and basil, and cook for another minute until fragrant.
  2. Build the flavour.
Add the tomato paste and sun-dried tomatoes. Stir everything together and cook for 2–3 minutes to allow the flavours to develop.
  3. Make the creamy sauce.
Pour in the plant-based cream and vegetable broth, then add the butter beans. Stir everything together and let the sauce simmer gently for 8–10 minutes, or until it thickens to a creamy consistency.
  4. Finish the dish.
Stir in the vegan parmesan until melted into the sauce. Add the spinach and cook for 1–2 minutes, just until wilted.

Serve immediately with crusty bread or my Cheesy Garlic Bread to soak up every bit of the creamy sauce.

ENJOY 🙂
