So, after making so many creamy pasta recipes, I wanted to create something a little different, and these Marry Me Butter Beans were the perfect idea. Inspired by the popular Marry Me recipes, this version uses creamy butter beans as the main ingredient, cooked with garlic, sun-dried tomatoes, herbs, and a delicious creamy sauce.

Whether you make it for a quick weeknight dinner or a cosy meal with family, this recipe always feels a little bit special. My husband and I both loved it, and we honestly couldn't stop eating it!

What you need to make Marry Me Butter Beans
You only need a few simple ingredients to make these creamy Marry Me Butter Beans. Most of them are easy to find, and together they create a comforting meal with a rich and flavourful sauce.

- Butter beans – The star of this recipe. They add a creamy texture and make this dish filling and satisfying.
- Onion and garlic – These aromatics create the flavourful base for the sauce and add so much depth to the dish.

- Vegan parmesan – Adds a delicious savoury, cheesy flavour and helps make the creamy sauce even more flavourful.
- Sun-dried tomatoes – They add a rich, slightly sweet flavour that works beautifully with the creamy sauce.
- Spinach – A simple way to add some greens and colours to the creamy sauce.
- Plant-based cream – This creates the rich and creamy sauce. Use your favourite cooking cream alternative.
- Vegetable broth – Helps build the flavour and brings all the ingredients together.
- Tomato paste – Adds a deeper tomato flavour and gives the sauce a beautiful colour.
- Oregano, basil – A mix of herbs for extra flavours.
- Salt and pepper - to taste.
- Chilli (optional) - if you like to add a bit of heat.

How to make Marry Me Butter Beans
Here's how to make this easy and delicious Marry Me Butter Beans Recipe:

- Cook the aromatics.
Heat the butter in a large pan over medium heat. Add the diced onion with a pinch of salt and pepper, and cook until softened. Add the garlic, chilli, oregano, and basil, then cook for another minute until fragrant.

- Add the tomato flavours.
Stir in the tomato paste and sun-dried tomatoes, and cook for a couple of minutes. This helps bring out the rich flavour of the tomatoes and creates a delicious base for the sauce.

- Make the creamy sauce.
Add the plant-based cream and vegetable broth, then stir everything together. Add the butter beans and let the sauce simmer gently for 8–10 minutes, or until it thickens and becomes creamy.

- Finish the dish Stir in the vegan parmesan until melted and combined. Finally, add the spinach and cook until wilted.
Serve your Marry Me Butter Beans warm with crusty bread or with my Cheesy Garlic Bread to soak up the creamy sauce. It’s a simple, comforting meal that’s perfect for a cosy dinner at home.

Tips for the best Marry Me Butter Beans
- Let the sauce simmer properly – Don’t rush the simmering time. Letting the sauce cook for a few minutes helps it thicken and allows the butter beans to absorb all the delicious flavours.
- Adjust the chilli to your taste – I love adding a little chilli for extra flavour and a gentle kick, but you can reduce it or leave it out if you prefer a milder dish.
- Add the spinach at the end – Stirring in the spinach right before serving keeps it fresh and prevents it from becoming overcooked.
- Serve with crusty bread – The creamy sauce is too good to leave behind! A slice of warm bread is perfect for soaking up every bit of it.
How to store it
Store any leftovers in an airtight container in the fridge for up to 3 days. When you’re ready to enjoy it again, gently reheat the butter beans in a pan over medium-low heat until warmed through. If the sauce has thickened too much, add a splash of vegetable broth or plant-based cream to bring it back to a creamy consistency.
I actually think this recipe tastes even better the next day because all the flavours have more time to come together. Although, if you ask me… you might not have any leftovers because it’s honestly too good! 😄

Ingredients
- 2 tbsp butter
- 1 onion
- 4 garlic cloves
- 2 tbsp tomato paste
- 1 tsp chilli (optional)
- 1 tsp oregano
- 1 tsp basil
- 2 cans butter beans
- 250ml vegan cream
- 150ml vegetable broth
- 50g vegan parmesan
- 80g sun-dried tomatoes
- 2 handful spinach
- salt and pepper to taste
Instructions
- Cook the aromatics.
Heat the butter in a large pan over medium heat. Add the diced onion along with a pinch of salt and pepper, and cook for 4–5 minutes until softened. Stir in the garlic, chilli, oregano, and basil, and cook for another minute until fragrant. - Build the flavour.
Add the tomato paste and sun-dried tomatoes. Stir everything together and cook for 2–3 minutes to allow the flavours to develop. - Make the creamy sauce.
Pour in the plant-based cream and vegetable broth, then add the butter beans. Stir everything together and let the sauce simmer gently for 8–10 minutes, or until it thickens to a creamy consistency. - Finish the dish.
Stir in the vegan parmesan until melted into the sauce. Add the spinach and cook for 1–2 minutes, just until wilted.
Serve immediately with crusty bread or my Cheesy Garlic Bread to soak up every bit of the creamy sauce.
