Description

A soft and fluffy berry fruit traybake made with fresh raspberries and blueberries. This easy vegan dessert needs just a few simple ingredients and is perfect for summer.

Ingredients

Units Scale
  • 300g plain flour
  • 100g sugar
  • 12g baking powder
  • pinch of salt
  • 200ml water
  • 100ml unsweetened plant based milk
  • 75ml oil
  • 1 tsp vanilla extract
  • 475g fresh mixed berries
  • a little vegan butter to brush the tray

Instructions

  1. First, preheat the oven to 180°C (350°F). Melt a little vegan butter and brush it evenly over a 20 × 30 cm baking tray.
  2. Add the flour, sugar, baking powder and salt to a large bowl and mix.
  3. Then pour in the water, plant-based milk, oil and vanilla extract. Mix gently until the batter is smooth, being careful not to overmix.
  4. Pour the batter into the prepared tray and spread it evenly.
  5. Arrange the raspberries and blueberries evenly over the top of the batter.
  6. Bake for 30–35 minutes, or until lightly golden and a toothpick inserted into the centre comes out clean.
  7. Let the cake cool before slicing into squares. Serve as it is or with a dusting of icing sugar.

Notes

  • I used a mixture of fresh raspberries and blueberries, but you can use your favourite berries or other fresh fruit.
  • Let the traybake cool before slicing so the pieces are easier to cut and hold their shape.
