My mum and grandmom used to make it when I was growing up. They would bake it in a large tray and top the light, tender cake with plenty of fresh fruit. In Hungary, it is especially popular with cherries. Still, it's easier to get raspberries and blueberries, so I decided to make my version with raspberries, blackberries and blueberries, which add a beautiful colour and a delicious, sweet, slightly tart flavour.

Here's how to make this easy fruit traybake:

Preheat the oven to 180°C (350°F). Lightly brush a 20 × 30 cm baking tray with vegan butter.
Add the flour, sugar, baking powder and a pinch of salt to a large bowl and mix until combined.

Pour in the water, plant-based milk, oil and vanilla extract. Mix until you have a smooth batter, being careful not to overmix.

Melt a little vegan butter and brush it evenly over a 20 × 30 cm baking tray.
Pour the batter into the prepared baking tray and spread it evenly.

Add the mixed berries over the top, spreading them evenly across the batter.
Bake for around 30–35 minutes, or until the cake is lightly golden and a toothpick inserted into the centre comes out clean.
Let the cake cool slightly before slicing it into squares. Serve on its own or with a dusting of icing sugar.

- Use fresh berries: Fresh raspberries and blueberries work really well here and give the cake a lovely fruity flavour.
- Don't overmix the batter: Mix just until the ingredients are combined to help keep the cake soft and light.

- 1 tsp vanilla extract
- 475g fresh mixed berries
- a little vegan butter to brush the tray
Instructions
- First, preheat the oven to 180°C (350°F). Melt a little vegan butter and brush it evenly over a 20 × 30 cm baking tray.
- Add the flour, sugar, baking powder and salt to a large bowl and mix.
- Then pour in the water, plant-based milk, oil and vanilla extract. Mix gently until the batter is smooth, being careful not to overmix.
- Pour the batter into the prepared tray and spread it evenly.
- Arrange the raspberries and blueberries evenly over the top of the batter.
- Bake for 30–35 minutes, or until lightly golden and a toothpick inserted into the centre comes out clean.
- Let the cake cool before slicing into squares. Serve as it is or with a dusting of icing sugar.
